I love fresh summer salads and this apple and walnut summer salad recipe has been a favourite of mine this week. Apples and walnuts work so well with each other, especially, when combined with fresh salad leaves, carrots and peppers making it a very quick and healthy meal. I often have it on its own but it also works well with meat or as a side salad to accompany your favourite barbecue. Serving it with rice or new potatoes also works very well too.
So here’s what you’ll need…
Salad base
Ingredients
200g mixed salad (a mix of botch crunchy and soft leaves work well)
50g cherry tomatoes
1 carrot
1 orange pepper
1 Royal Gala apple
50g walnuts
2 tablespoons of lemon juice
Method
Sprinkle out the mixed salad in to a bowl.
Chop and add the tomatoes, carrots and pepper.
Chop the apple and then drizzle with the lemon juice to stop it browning. (The lemon juice on the apple works incredibly well with the salad dressing below.)
Add the apple to the salad.
Chop up the walnuts and sprinkle them over the salad.
Salad dressing
Ingredients
60ml olive oil
20ml balsamic vinegar
1 teaspoon of sugar
half a teaspoon of mild/medium mustard
Method
Put all the ingredients in a bottle and shake.
Have a little taste and add any more seasoning to taste. I like a more sharp/vinegary dressing so I usually add a splash more of vinegar.
Dress the salad and serve straight away. If you think you’re going to have too much simply amend the quantities to suit your servings. Any left overs are perfect for lunch boxes and will keep for a day or two in an air tight container.
