Pancakes are truly an amazing thing and, as the Eyes of Lady W bloggers learned, can be transformed into a stunning dish when you have an incredible chef making them for you.

NC Supper Clubs chef, Arup Dasgupta, gave us a demonstration of how he creates delicious Scotch pancakes from scratch. While he was cooking, we were treated to a great talk on the way that flavour and nutrition can be added to these simple pancakes by the countless ways in which you can top them.

The pancakes were so thick and yet were as light as a feather. The smell of them cooking was heaven yet hell as I waited, as patiently as possible, for them to be served. As a pile of them were bought to the table the faces of all the guests were filled with delight.

The topping choices we had were incredible and some I would have never put with pancakes. Chef Arup had prepared a range of fruity and savoury accompaniments including fig compote, poached peaches, smoked salmon, fresh berries, matcha tea, creme fraiche, seeds and even caviar.

The range of flavours were outstanding and with advice from Arup I enjoyed my first pancake with poached peaches, fresh berries and a dusting of green matcha tea which added a delicious tartness.

Others around the table had smoked salmon with creme fraiche topped with caviar. Another had salmon and berries topped with seeds. The chef himself showed us how he decorates his pancakes and it was a super display of how chefs have such talent and knowledge of the way that flavour works and how they can make it look absolutely incredible on the plate.

Topped off with edible flowers and leaves the pancake by the chef was what everyone in the dining room was in awe of.
