Set Up The BBQ Like A Pro

Clean your BBQ and grill and gather all the tools you will need to stoke the coals and turn the meat. A table beside the BBQ is always helpful. Make sure the BBQ is the right temperature before cooking. If it’s too hot, everything will burn on the outside and be raw on the inside. You want half of the grill to be in direct high heat, and the other half with no heat. With our Weber BBQ, we wait for the coals to be mostly covered with grey ash, in a tight pile, over half the grill, two to three coals deep. Place the grill on top of the coals and heat.

Prepare Your Food

Removing meat from the fridge 20-30minutes before grilling helps it to cook more evenly. Transport Yourself To The Ocean With Fish

Seafood is spectacular on the BBQ, and is often a healthy choice. Our Scottish Salmon Fillets (£6.60 for 2, shop here >) are divine, plump and fleshy. Or try the Garlic Marinated Prawns (£10.88 for 500g, shop here >). They come frozen, we defrost ours and literally whack them on the BBQ for 2 minutes on each side. For example, place the lobster tails on the grill, meat-side up. Grill tails with grill lid closed, until the meat is opaque, about 6-8 minutes, turning once. Be careful not to overcook! How To Cook The Perfect Steak (Tomahawk)

Put the steaks on the grill over indirect heat, away from the lit coals, with the bone side of the steaks facing the heat. Close the lid, and position the air holes directly over the steaks. Cook the steaks with the lid closed; after ten minutes, flip the steaks and swap them so the steak that was farther away from the heat is now closer. The steaks are ready for searing after about 20 minutes (you will need to adjust based on the size of the steak – this is based off  1.1kg) of indirect cooking (if you like your meat less rare, add a few more minutes to the indirect cooking time). Quickly sear the steaks over direct heat then move the meaty part of the steaks directly over the coals, with the bones hanging over the indirect heat part of the grill. Sear the steaks; flipping every minute or two, until they are browned and crusty, this takes about 6 minutes. Take off the heat and rest the steaks for about 10 minutes before serving. Carve With Care

After lovingly grilling your steak on the BBQ, serving the meat deserves just as much care. We like to place our steaks on a cutting board and run a sharp knife along the curve of the bone to carve the meat from the bone. Slice and serve the steaks on a large board so everyone can pick and choose the meat cooked to their liking; from the flavoursome well done slices at the outside to the tender, more rare pieces in the middle.
